01 - Line a mini muffin tin or small silicone molds with paper liners, or lightly coat with nonstick spray.
02 - In a medium bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir until completely smooth and well incorporated.
03 - Spoon the mixture evenly into the prepared molds, filling each cavity about three-quarters full.
04 - Sprinkle desired toppings over each filled mold, gently pressing them into the surface so they adhere.
05 - Place the tin or molds in the freezer for at least 2 hours, or until the bites are completely firm.
06 - Remove the frozen bites from the molds and transfer to an airtight container. Store in the freezer and enjoy directly from frozen.
