Creamy, cheesy dip with roasted garlic and Italian herbs, served hot and bubbly.

# What You Need:

→ Dairy Base

01 - 8 oz cream cheese, softened to room temperature
02 - 1 cup ricotta cheese, whole milk
03 - 1 cup shredded mozzarella cheese, divided
04 - 1/2 cup grated Parmesan cheese
05 - 1/2 cup sour cream

→ Aromatics & Seasonings

06 - 4 cloves garlic, minced
07 - 2 tbsp fresh basil, chopped
08 - 1 tsp dried oregano
09 - 1/2 tsp red pepper flakes
10 - 1/2 tsp freshly ground black pepper
11 - 1/4 tsp kosher salt
12 - 1 tbsp olive oil

→ Garnish & Serving

13 - 2 tbsp fresh parsley, chopped
14 - Crusty bread, baguette slices, or crackers for serving

# How-To:

01 - Preheat oven to 375°F. Lightly grease a 1 to 1.5-quart baking dish with cooking spray or butter.
02 - Heat olive oil in a medium skillet over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant and pale gold, taking care not to brown or burn.
03 - In a large mixing bowl, beat softened cream cheese until smooth. Add ricotta, 1 cup mozzarella, Parmesan, and sour cream. Mix until fully incorporated and creamy.
04 - Fold in sautéed garlic, basil, oregano, red pepper flakes, black pepper, and salt. Stir until evenly distributed throughout the cheese base.
05 - Transfer mixture to prepared baking dish, spreading into an even layer with a spatula. Top with remaining 1/2 cup mozzarella, covering surface completely.
06 - Bake for 20–25 minutes until dip is bubbly around edges and cheese topping is golden brown. If deeper color is desired, broil for 1–2 minutes at the end.
07 - Remove from oven and let rest for 5 minutes to set. Sprinkle with fresh parsley just before serving.
08 - Serve immediately while hot and bubbly. Accompany with toasted baguette slices, crusty bread, or crackers for dipping.

# Expert Tips:

01 -
  • It tastes exactly like the best part of a white pizza but in shareable dip form
  • The roasted garlic flavor mellows into something incredibly addictive without being overpowering
02 -
  • The dip will look slightly jiggly when you first pull it out but it firms up as it cools
  • Adding cold toppings to hot dip can make it separate and look less appealing
03 -
  • Use room temperature ingredients to prevent grainy texture
  • Broil for the last 2 minutes if the top needs more color
