Chewy marshmallow cereal bars studded with caramelized cinnamon apples and vanilla. A fun autumn-inspired dessert that comes together quickly.

# What You Need:

→ Base

01 - 6 cups crispy rice cereal
02 - 1/4 cup unsalted butter
03 - 1 (10 oz) bag mini marshmallows
04 - 1/2 teaspoon vanilla extract

→ Apple Pie Filling

05 - 1 medium apple, peeled, cored, diced small
06 - 2 tablespoons unsalted butter
07 - 2 tablespoons light brown sugar
08 - 3/4 teaspoon ground cinnamon
09 - 1/8 teaspoon ground nutmeg
10 - Pinch of salt

→ Optional Topping

11 - 2 ounces white chocolate, melted (for drizzling)

# How-To:

01 - Line a 9x9-inch baking dish with parchment paper and lightly grease it.
02 - In a small skillet, melt 2 tablespoons butter over medium heat. Add diced apple, brown sugar, cinnamon, nutmeg, and a pinch of salt. Cook, stirring often, until the apples are tender and caramelized, about 4-5 minutes. Remove from heat and let cool slightly.
03 - In a large saucepan, melt 1/4 cup butter over low heat. Add mini marshmallows and stir until completely melted. Remove from heat and stir in vanilla extract.
04 - Quickly fold in the cooked apple mixture, then add the rice cereal. Stir until everything is evenly combined.
05 - Press the mixture firmly into the prepared baking dish, smoothing the top with a spatula.
06 - Optional: Drizzle melted white chocolate over the top.
07 - Let cool at room temperature for at least 1 hour before cutting into squares.

# Expert Tips:

01 -
  • The contrast between warm, spiced apples and that familiar crispy crunch is honestly better than it has any right to be
  • They come together in under 30 minutes but taste like something much more involved
02 -
  • Working quickly once the marshmallows are melted is non negotiable, they start setting up fast
  • Letting the apples cool slightly before mixing them in prevents the marshmallows from seizing
03 -
  • Grease your spatula before pressing the mixture into the pan to avoid sticking
  • Room temperature marshmallows melt faster than cold ones straight from the bag
